What a Weekend!

What a great weekend! Despite her best efforts, including some strong storms Saturday night, Mother Nature did not ruin our weekend plans.
Saturday night we planned a cookout with some of our friends. We did a taco bar instead, and that was lots of fun! A taco bar was a great option, as we had both meat eaters and vegetarians and everyone was able to enjoy a hearty dinner.

Instead of traditional taco meat, I made shredded Salsa Chicken. This recipe couldn’t be easier, and came from our good friend, Ben Moody.  Delicious!
Salsa Chicken:
4 chicken breasts
1 jar Pace Picante Mild Salsa
1 cup freshly shredded pepper jack cheese
Directions, Part A:
1. Place chicken in crock pot (heat turned to 'Low')
2. Dump jar of salsa on top of chicken
3. Stir, then forget about chicken for approximately 4-5 hours
Directions, Part B:
5. Remove chicken and shred using two forks (it should basically shred by itself at this point)
6. Remove all but ½ cup liquid from the crock pot
7. Put chicken back in crock pot and stir in cheese (I didn’t measure, but I used a little less than 1 cup)
8. Enjoy!
On Sunday, Mike and I had planned a romantic picnic at the House o’ Dreams at Berry College. Mother Nature did thwart those plans, as we figured the hike would be a muddy mess. Plus, “on top of the mountain” is not exactly where I wanted to be if a thunderstorm wanted to join our picnic.
So we changed our plans, and went exploring all over the Mountain Campus at Berry College instead. We had such a great time, and of course I captured the experience with way too many photos!



No visit to Berry is complete without seeing at least one herd of deer!

 After we left Berry, we stopped in Cartersville to visit the Booth Western Art Museum. It’s something we’ve wanted to see for awhile, and it’s gotten great critical reviews.

Our review: Definitely worth the hour drive to get there! It was really neat!
My favorite parts were the presidential gallery that featured a letter from each president and also the stage coach pictured below. It was HUGE! (And didn’t look remotely comfortable … so glad I got to ride home in a sedan!)

  1. Berry College, 28,000 acres, largest campus in the world and definitely beautiful...I'm glad you went to visit. Hopefully you showed Mike the Mary dorm buildings...many happy memories for you in those buildings...seasonal decorative doors (do you remember receiving mail packages with fabric to decorate the doors with? I really enjoyed surprising you with the packages of fabric) and white boards with your whereabouts!
