I decided to hang a simple curtain to conceal my closet, which turned out to be harder to find than I thought it would be. I wanted an ivory curtain that was not too sheer and ended up finding it at Target for around $10. Not bad!
I purchased a standard 82" panel, which is a few inches too long. I was going to have my mom hem it, but it's actually worked just fine the way it is. It's hanging on a simple tension rod. I was initially looking for a curtain that either had grommets or that I could hang with rings, thinking it would be easier to open and close. Again, I've found it be be perfectly usable this way.
The only other thing I would like to do is fashion some sort of tieback. When it's pulled back (which is 90% of the time) I still find myself pushing it out of the way on my way in/out of the closet. I'm thinking about finding some pretty ribbon in a wide width that will match our new bedspread.

And, yes, removing the door has been a huge improvement! I no longer dread having to get something out of the closet.
