Pumpkin Chocolate Chip Cookies

These cookies are awesome!! I needed to make a dessert Saturday night and didn’t want to run to the grocery – I love that these cookies use simple ingredients you probably already have in your pantry.

They came together very quickly and once baked they were more cake-like than cookie-like. My friend compared them to muffin tops; I think they taste just like pumpkin chocolate chip bread. They taste even better served cold!

Pumpkin Chocolate Chip Cookies

Ingredients:

1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
1 cup semisweet mini chocolate chips

Directions

1.Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.

2.Add vanilla, chocolate chips and nuts.

3.Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.

You’ll see I made a few minor tweaks (PP Spice and mini chips). My cookies were done in exactly 10 minutes. Also, some of the reviews say to add food coloring – definitely not needed.
