Simple Toddler Meals

Below are two delicious meals that are very kid-friendly. They are also super quick and easy; dinner (or lunch) can be on the table in 15 minutes.

I was ad-libbing in the kitchen when I created them, so the recipes aren’t very scientific. And my food photography skills don’t exist yet, so you’ll have to use your imagination.

Sweet Potato and Black Bean Quesadillas

  • Flour tortilla
  • Reduced Sodium Black Beans, rinsed and drained
  • Cooked and chopped sweet potato
  • Cheddar Cheese

Layer all ingredients onto the tortilla and heat in a skillet until hot and cheese melts. They are especially tasty with a dollop of sour cream on top.

Special Tomato Soup

  • Cooked, finely chopped chicken or turkey breast (about ¾ cup)
  • 1 can Campbell’s Healthy Request Tomato Soup
  • 1 small can mixed vegetables, drained and well-rinsed (the “half can” size)
  • Cheddar Cheese

Heat soup (w/ water added), meat and vegetables until hot. Use an immersion blender to puree until almost smooth. Spoon into bowls, add desired amount of cheddar cheese to bowl and stir. Serve once cheese has melted. This is so good on a cold winter’s day!

A note about cheese:

I almost always use either Kraft 3-cheddar blend or Sargento 4-state cheddar when a dish calls for cheese. It really makes a difference to the depth of flavor!
